Buy of the Week

Basically these shoes are awesome! I have been longing for these Nikes since i saw them on Pinterest and i finally did it. I found a pair in my size! I am longing for that sweet package to show up on my doorstep so i can rock these beauties!
Here is my favorite outfit styled with these nikes so far!
The thing about this pair is they can be sported with some skinnies or just some legging if you want to be comphy and cute! (Also I am digging her hair in these pictures. I can't wait until mine is that long again! It's pretty long straight though. It goes to the middle of my back)

I am having buyers remorse because I am trying to be super good and reserved with our
money these days, but this purchase was out of my control.....ok well not really, but they were calling my name. Here is the only site where I found my size still available and they were on sale for $39! Crazy good deal! Click HERE to get some for yourself.

Landscape Love

So I am dreaming of doing our Landscape in the front and back, but this summer we are going to be doing the front...fingers crossed that we save up enough money. Here is a bit of inspiration...

Our dreams include, decks, a skinny horizontal red wood fence in the front, some black mexican river rock, succulents, natives, artichokes, and more. Ohhh and if we have any cash money to spare i love the concrete blocks...you know the ones that look super clean and modern.

What's for Lunch?

When I had Gavin, I wasn't used to having lunch at home. I went from working full time and making sure I always took a lunch, to working from home 15-20 hours a week and being a mom who barley has enough time to make a lunch yet alone a snack.

Here is my go-to lunch! it's super easy and everything is usually on hand in my pantry and fridge.
I like to call these my little lunch wraps. I used to make a version of this with Jenn whenever her and Jeff would have chicken leftovers.

All you need are: pre-washed bagged lettuce (any kind you want), craisins, goat cheese, bagged shoe string carrots, walnuts, chicken (I usually use any kind of chicken leftovers, or else I go vegetarian for the meal), avocado, and balsamic dressing.....
Basically you throw this in a tortilla, wrap it up, and enjoy!
I feel like it's gourmet when it only takes 2 minutes to prep. Try it out, it's delicious!

Golden Beets

Did I really just say Golden Beets? Yep, yes I did.
Right now it's the season, and every farmers market we go to, I see these beautiful but not so yummy root veggie. Or so I thought. Recently we went to our friends house, the wonderful Barker family, and had a delicious salad, which had what you ask...? GOLDEN BEETS as an ingredient. I have tried to eat beets a number of time, but usually i try my grandmas steamed or roasted red beets, and I admit that I was not a fan. Golden beets however aren't as strong as a red beets and have a little bit of a sweet flavor. So I went to farmers on Saturday, purchased beets for the first time, and roasted them for a yummy salad. This salad had: avocado, goat cheese, golden beets, arugula, butter leaf, candied pecans, and pink lady apples. Korey (my amazing husband) actually ate everything in it, with a few beet pieces to spare. I was impressed. BEETS are BACK I thought!
Since then I have found this yummy SPICEY ROASTED BEETS recipe from For the Love of Food. It's super simple.

2 bunches of medium golden beets, tops trimmed and quartered
2 Tbs coconut oil

Spices:
1/2 teaspoon cumin
1/2 teaspoon paprika
a pinch of chile powder
1/4 teaspoon sea salt

Preheat oven to 400 degrees.  Toss beets with oil and lay flat on sheet pan.  Toss with spice mixture.  Roast for 30 minutes, or until tender.  Sprinkle with some additional salt and pepper, if desired.  Serve warm and enjoy!
